A once-in-a-lifetime experience... walking around on an island in Tierra del Fuego that two penguin colonies, mostly Magellanic, and a much smaller colony of Gentoos (which are usually only found in Antarctica so we felt very privileged to see them and they were definitely my favorite ones). It was incredible.

Links I loved this week:

Easy Cocoa Almonds {A Healthy Sweet Treat} @ day2day joys

Simple, European Style, Everyday Bread Recipe With Video @ My Humble Kitchen. As soon as I have an oven again, I'd love to try this. It's hard to find good quality bread here, other than baguettes, and I'm a little tired of those. Granted, I'm taking a week off of grains right now and I actually wouldn't mind a baguette at this very moment...

**Speaking of no grains... I just thought I should mention that if you're grain/gluten free, you may be interested in the Bundle of the Week, which has 5 different grain and gluten free resources right now for just $7.40!

Tutorial: How to Make Reusable Snack & Sandwich Bags @ Green...Your Way. This looks like something even I, the non-sewer, could make. I've been really wishing I had thought to bring something like this on our trip. Without my usual stash of food storage solutions in my regular kitchen back home, I often have a hard time knowing what to do with leftovers and snacks.

Do You Have a Diastasis? @ The Humbled Homemaker. Erin and I have been talking about this lately, since she's currently doing the exercises from Fit2B, and I'm considering trying it out. Imagine... actually getting rid of the mommy tummy?!

No-Bake Brownie Bites @ The Marathon Mom. I adore treats like this. My food processor is back home, so can someone please make and eat these on my behalf?

How to Find Your Real Food Style @ Food Renegade

what a hundred lifeguards taught me about my calling @ chatting at the sky. Thanks, sweet friend. I definitely needed this encouragement to focus on just my corner of the pool.

these days @ Sorta Crunchy

Apple oat bars... "baked" in a frying pan.

This week...

What I'm doing:

holding down the fort with my four kids, in a foreign country, for 11 days, while my husband has the adventure of a lifetime in Antarctica (and we are so thrilled for him!)

walking with penguins, spying on sea lions, gazing out at the sea, enjoying the "end of the world"

making extremely creative use of foods and a poorly equipped kitchenette to fulfill culinary cravings and make yummy goodness for my kids-- did you know you can make apple oat bars in a large frying pan with a lid?

enjoying richer prayer times than I have in a while, finding the Lord always near when I draw nearer to Him

And you?
